This recipe is SO SIMPLE AND the chicken is so moist and flavorful! Golden rule: if you know someone in the family doesn’t like mayo…don’t tell them until they eat their second helping…they won’t even know…trust me it’s that good! I could eat this every other day. Enjoy!
Ingredients: Serves 4 (although let’s be honest…you’ll want seconds)
1 cup of Grated Parmesan cheese
1 cup of Hellman’s mayonnaise
1 Tbsp of Garlic powder
1 cup of Italian bread crumbs
2 butterflied boneless skinless chicken breasts OR 4 boneless skinless chicken breast cutlets
Mix the mayo, Parmesan and garlic powder into a thick paste and generously cover both sides of the chicken. I find it easier to coat one side, and put it coated side down into the bread crumbs then coat the other side and dip into the bread crumbs but whatever you think works best. The end result is paste covered chicken dipped in bread crumbs.
Place finished chicken into a cooking spray coated glass baking dish or parchment lined (whichever you prefer) bake until dark golden brown at 425F (in my oven it’s about 15-20 minutes)
You can serve with steamed veggies and mashed potatoes or even slice it up and eat it with a fresh salad.
