RECIPE: Instant Pot Filipino Chicken Adobo


Enjoy this super easy to make 20 Minute Instant Pot Meal! I am half Filipino and absolutely LOVE this Chicken Adobo Recipe!

Ingredients: (Serves 8…hellooooo leftovers!!!)

2 packages of chicken thighs bone-in (I use organic whenever possible)

2/3 cup of apple cider vinegar

1/2 cup of soy sauce

2/3 cup of water

1 Whole Garlic Bulb peeled and Chopped not diced

2 tsp of black pepper

1 small onion julienned

3 bay leafs

1/3 cup of canola oil


Place chicken thighs in the instant pot. Combine soy sauce, water, and vinegar and pour over the chicken thighs. Leave to marinate for 15 minutes. Add the remaining ingredients and pressure cook in the instant pot for 20 minutes. After releasing pressure, remove chicken and set instant pot to sauté for 5 minutes to thicken the sauce. Serve chicken over rice and top with sauce.

You can also make chicken adobo tacos with this meat! SOOOO yummy!
